During the workshop I conducted last Saturday, the head baker mentioned a bread ingredient, Monopress, that she needs for a new recipe that they are experimenting with. According to her, it really improves the quality of the bread, and she has been looking for it for quite a while already.
My cousin, her boss, immediately sent an SMS to one of their suppliers. The supplier replied that MonoFRESH is available.
ANUH?!!! Napahiya cousin ko… Monofresh pala, not Monopress. Si Manang talaga!!! RAWR!
But what IS Monopress? Is it a mystery food like Soylent Green?
Soylent Green???
Monopress is actually Monofresh, an ingredient used to make breads softer and last longer.
